Food and the Senses

‘The habit of always eating the same things & more or less prepared in the same fashion generated distaste, which aroused curiosity, this in turn yielded experiences which awoke the senses; man started to taste, experiment, diversify, choose and create a form of art at once most simple and natural.’

This is how the Chevalier de Jaucourt described the birth of the cuisine in the eponymous article of theEncyclopédie (1754). Yet it took until the end of the twentieth century for the topic of ‘food and the senses’ to attract specialized study in both the human and natural sciences. It now seems time to attempt a first survey. While relevant research on all the senses expands in history, art history, anthropology, philosophy and many other disciplines, the 2014 Summer University examines this theme from a broad diachronic and comparative perspective. To achieve its objectives, it will offer participants lectures and seminars by distinguished specialists, hands-on practice, workshops, methodical sessions and the opportunity to present their own research in the field.

organisent la douzième université d’été à Tours

du 31 août au 7 septembre 2014 sur le thème :

LES SENS DANS L’ALIMENTATION

« L’habitude de manger toujours les mêmes choses, & à - peu - près apprêtées de la même manière, enfanta le dégoût, le dégoût fit naître la curiosité, la curiosité fit faire des expériences, l’expérience amena la sensualité; l’homme goûta, essaya, diversifia, choisit, & parvint à se faire un art de l’action la plus simple & la plus naturelle ».

Le Chevalier de Jaucourt décrivit avec ces mots la naissance de la cuisine dans l’article qu’il lui consacra dans L’Encyclopédie (1754). Il faudra néanmoins attendre la fin du XXe siècle pour que les sens en rapport avec l’alimentation enfantent des études aussi bien en sciences humaines qu’en sciences dures. Le temps est venu de dresser un premier bilan. Alors que les travaux sur la thématique des sens se multiplient en histoire, histoire de l’art, anthropologie ou philosophie, l’Université d’Eté 2014 propose d’étudier ce thème sur une période longue et de confronter terrains et concepts, en encourageant les approches pluridisciplinaires. Pour atteindre cet objectif, elle offrira aux étudiants les interventions d’un large panel de spécialistes, des ateliers pratiques, des workshops de méthodologie et l’opportunité de présenter leurs recherches.
